MIXED VEGETABLE CASSEROLE 
16 oz. bag frozen mixed vegetables
1 can cream of mushroom soup
1 c. shredded Swiss cheese
1/3 c. sour cream
1/4 tsp. black pepper
1 jar diced pimento, drained
1 (2.8 oz.) can Durkee's French fried onions

Combine all ingredients except 1/2 cup cheese and 1/2 can onions. Pour into shallow 1 1/2-quart casserole. Bake covered at 350 degrees for 30 minutes or until vegetables are done. Top with rest of cheese and onions. Bake uncovered 5 minutes longer until golden.
