CHICKEN WITH MUSHROOMS AND
CHEESE
 
6 chicken cutlets (you can keep whole or cut)
1 (8 oz.) bag Mozzarella cheese, shredded
2 sm. cans cut mushrooms
Bread crumbs
2 eggs
1 1/2 c. oil

Cut chicken cutlets. Put moderate amount of bread crumbs in flat dinner plate. Take 2 eggs and beat in wide bowl. Take oil and put in large frying pan. Take chicken and dip both sides in egg and then place in bread crumbs. Make sure it covers both sides. Place in frying pan. Cook until golden on medium heat. Watch carefully, they will burn easily. Flip over and cook until golden. Check frequently. Put on large plate and absorb grease with paper towel. Place in baking dish. Put cheese on, then put mushrooms on top. Bake, uncovered, for 20 minutes at 350 degrees.
