CHICKEN ROLLS STUFFED WITH
CHEESE & MUSHROOMS
 
FILLING:

2 tbsp. butter
2 tbsp. flour
1/2 c. half and half
1 1/2 c. shredded cheddar cheese
1/2 c. mushrooms, sliced
Fillet chicken breast, 6 or more
4 eggs, beaten
Progresso seasoned bread crumbs

Melt butter and flour; stir. Add milk, etc. Put everything together in a teflon frying pan and melt together; cool. Place chicken flat on wax paper and stuff with 1 tablespoon or more of filling and roll. Secure with toothpicks (try sealing ends too).

Dip in eggs and then in bread crumbs. Set in refrigerator for 1 hour. Heat frying pan with 1" Mazola oil. Place rolls in pan and fry until golden brown on all sides.
