PUMPKIN COOKIES 
1/3 c. shortening
1 c. sugar (half may be brown or honey)
1 c. canned pumpkin
2 1/4 c. flour
4 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. ginger
1/4 tsp. nutmeg
1/2 tsp. salt
1/2 tsp. vanilla
1 tsp. lemon juice or flavoring
1 egg
6-8 oz. chocolate chips (optional)

Cream sugar and shortening. Add eggs, mix well. Add pumpkin and flavorings. Add dry ingredients, mix. Add chocolate chips, if used. Drop on greased cookie sheet. Bake at 375 degrees for 10-12 minutes. Frost, if desired.
