PUMPKIN COOKIES WITH CHOCOLATE 
4 c. flour
2 c. quick oatmeal, uncooked
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 c. softened butter
1 c. granulated sugar
1 c. brown sugar, packed
1 egg
1 tsp. vanilla
1 can pumpkin (15 or 16 oz.)
1 c. real chocolate chips

Preheat oven to 350 degrees.

Combine flour, oats, soda, cinnamon and salt; set aside.

Cream butter and gradually add sugars, beating until light and fluffy. Add egg and vanilla; mix well.

Alternate addition of dry ingredients and pumpkin, mixing well after each addition. Stir in chocolate chips.

For each cookie, drop large tablespoon onto cookie sheet. Bake for 20 to 25 minutes until cookies are firm and lightly browned. Remove from pan and cool on racks.

This recipe needs to be divided in half, it made WAY too many cookies! Also, I had to add milk because it was way too thick to stir in all the dry ingredients. The cookies are delicious, but it tastes like not quite enough sugar and chocolate chips and too much butter for my taste. Doesn't really taste much like pumpkin either. Oh well.
