PIZZELLE 
3 eggs
3/4 c. sugar
3/4 c. butter (melted and cooled)
2 tsp. anise extract
1 tsp. vanilla extract
1 1/2 c. flour
1 tsp. baking powder

Preheat pizzelle iron. In large mixer bowl on low speed, beat eggs and add sugar; blend well. Stir in butter and extracts. Add flour and baking powder and continue beating just until well mixed. Drop by rounded tablespoon onto center of iron. Cover and cook 30-60 seconds. Remove with fork. Let cool. Makes approximately 30 cookies.
