6 eggs 3 1/2 c. flour 1 1/2 c. sugar 1 c. butter (1/2 lb.) 4 tsp. baking powder (level) 2 tbsp. vanilla or anise seeds or both Beat eggs, adding sugar gradually. Beat until smooth. Add cooled, melted butter, vanilla extract and/or anise seeds. Sift flour and baking powder and add to the egg mixture. Dough will be sticky enough to be dropped by teaspoon onto the pizzelle maker. For chocolate pizzelles: add 1/2 cup cocoa (bitter) and 1/2 cup sugar and 1/2 teaspoon baking powder to egg mixture. For pizzelles with nut: add 1 cup walnuts or pecans, chopped fine to batter. DIETITIAN'S NOTE: Egg substitute will rid this recipe of cholesterol. Sugar can be reduced to 3/4 cup and 9 Sweet one packets. |
