PIZZELLE 
6 eggs, beaten
3 1/2 c. flour
1 1/2 c. sugar
2 sticks butter, melted and cooled
4 tsp. baking powder
2 tbsp. vanilla extract
Confectioners' sugar

Using electric mixer, beat eggs, add sugar gradually until smooth. Add vanilla and butter. Sift together flour and baking powder and add to egg mixture a little at a time using a wooden spoon to mix. Dough is sticky enough to drop by spoonfuls. Grease pizzelle iron and heat for 15 minutes. Drop about 1 tablespoon dough on iron, close and cook about 20 to 30 seconds. Dust with confectioners' sugar. Yield about 48.
