BASIC BEER BATTER | |
2 eggs, separated 12 oz. of beer 1 1/2 c. all-purpose flour 4 tbsp. cornstarch 1/2 tsp. salt Combine egg yolks and beer, blending well. Beat in flour, cornstarch and salt. Let stand for 1 hour. Beat egg whites until almost firm and whisk into batter. Dip fillets into batter and following cooking procedure for the dish your prepare. |
