RICE LASAGNA 
1 1/2 c. white rice
1 med. onion, chopped
2 egg whites
1 (16 oz.) container of non-fat cottage cheese
1 (8 oz.) pkg. Mozzarella cheese
1 (32 oz.) jar spaghetti sauce

1. Cook rice.

2. Coat 13"x9"x2" dish with cooking spray.

3. Heat sauce and onion for 2 minutes on medium high heat.

4. Beat eggs in bowl and stir in cottage cheese and Mozzarella.

5. Spread half sauce over bottom of baking dish. Then spoon half rice over sauce. Top with half of cheese mixture and repeat layers.
