RICE LASAGNA | |
1 1/2 c. long grain rice 1 lg. ground beef 1 med. onion, chopped 1/4 c. chopped green pepper (sweet) 1 (32 oz.) jar spaghetti sauce 1 egg 1 (8 oz.) pkg. skim Mozzarella cheese, shredded 1 (16 oz.) container low-fat cottage cheese 1/4 c. grated Parmesan cheese Cook rice following package directions and reserve. Coat 13x9x2 inch baking dish with cooking spray. Brown hamburger in large skillet over medium heat. Pour off excess fat. Add onion and green peppers. Cook, stirring 2 minutes. Add spaghetti sauce. Beat egg; stir in cottage cheese and Mozzarella cheese. Spread half sauce in bottom of baking dish. Spoon on rice mixture and top with half cheese mixture. Repeat layers. Sprinkle with Parmesan cheese. Bake at 350 degrees for 50 minutes. Let stand 10 minutes before serving. |
