GOLDEN PASTA AND RICE | |
Planning: May sit covered 30 minutes before serving. Preparation time: 10 minutes. Cooking time: 25 to 30 minutes. Yield: 4 servings. 2 tbsp. butter 2 tbsp. butter 1/4 c. minced onion 2/3 c. long grain white rice 2/3 c. spaghetti, broken into 1/2 to 1 inch pieces 2 c. broth (chicken or beef) Melt butter and butter in a 2 quart saucepan over medium heat. Add onion and saute 3 minutes. Add rice and broken spaghetti and cook, stirring frequently, until golden brown (5 to 7 minutes). Add broth, bring to a boil, cover and cook over low heat until liquid is absorbed, about 20 minutes. Stir before serving. Note: White or green spaghetti can be used - or both. |
