FRESH APPLE CAKE 
1 1/2 c. vegetable oil
3 eggs
2 c. sugar
3 c. flour
1 tsp. salt
1 tsp. vanilla
1 tsp. baking soda
3 c. diced raw apples
1 c. raisins
1 c. chopped nuts (pref. pecans)

Dust apples, raisins and nuts with some of the flour. Set aside. Blend oil, sugar and slightly beaten eggs. Sift together remaining flour, salt and add to egg mixture. Fold in apples, nuts and raisins. Turn into 10 inch greased tube pan. Bake 1 hour and 15 minutes at 325 degrees.

SAUCE:

1/2 c. buttermilk
1 stick butter
1 c. sugar
1 tsp. vanilla
1/2 tsp. baking soda

Combine buttermilk, butter, sugar, vanilla and soda. Boil rapidly for 2 minutes, stirring constantly. Pour over cake in pan while cake is still hot. Leave in pan for several hours before removing. Or

ORANGE GLAZE:

1/4 c. fresh orange juice
1 c. confectioners' sugar

Combine orange juice with sugar. Heat, stirring constantly until all sugar is dissolved. Pour hot glaze over cake while still hot.
