FRESH APPLE CAKE 
1 c. cooking oil
3 c. plain flour
1 c. chopped nuts
2 tsp. vanilla
3 c. peeled, chopped fresh apples
2 c. sugar
2 eggs
1/2 tsp. salt
1 tsp. baking soda

Combine oil and sugar. Add well beaten eggs and vanilla. Measure dry ingredients to first mixture. Stir in apples and nuts; combine thoroughly with preceding ingredients. Pour into tube or loaf pan and bake at 300 degrees until done.

CARAMEL GLAZE:

1 c. brown sugar
1 tsp. vanilla
1/2 c. butter
1/4 c. evaporated milk

Place butter and sugar in double boiler and allow to melt. Blend well. Add cream and bring to a full boil. Cool and add vanilla. Spread evenly over cake.
