FRESH APPLE CAKE 
2 1/2 c. flour
1 tsp. baking soda
1 tsp. salt
1 1/4 c. Wesson oil
2 c. sugar
2 eggs
2 tsp. vanilla
3 fresh apples, peeled and fine chopped
1 c. pecans, chopped

Sift flour, soda, and slat into small bowl. In large bowl mix Wesson oil, sugar, eggs, vanilla, apples and nuts. Add flour mixture to larger bowl and mix. Bake in 9 x 13 pan at 350 degrees. Sprinkle powdered sugar over cake while it is cooling.
