FRESH APPLE COFFEE CAKE 
1 c. all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
3/4 lb. Golden Delicious apples, peeled, cored & diced
1 egg, beaten to blend
1 c. sugar
1/2 c. coarsely chopped walnuts
1/4 c. vegetable oil
1 tsp. cinnamon
1/4 tsp. freshly grated nutmeg

Preheat oven to 350 degrees. Grease 8 inch square baking pan. Sift flour, baking soda and salt into small bowl. Toss apples with egg in large bowl. Mix in sugar, nuts, oil, cinnamon and nutmeg. Add dry ingredients and then stir until just combined. (Cake batter will be pasty.)

Spread batter in prepared pan. Bake until tester inserted in center comes out clean, 40 to 45 minutes. Cool in pan on rack 10 minutes. Cut into squares and serve.
