APPLE CAKE 
4 c. Delicious red apples, unpeeled & chopped
1 3/4 c. sugar
2 eggs
2 tsp. vanilla
2 tsp. baking soda
1 tsp. salt
1/2 c. oil or soft butter
2 c. flour
2 tsp. cinnamon

HOT BUTTER SAUCE:

1 c. sugar
1/2 tsp. cinnamon
1/2 c. melted butter
1/2 c. whipping cream or evaporated milk

Cut apples in quarters; core. Slice each quarter 4 times then chop. Combine apples and sugar, let stand. Beat eggs slightly. Beat in oil and vanilla. Mix dry ingredients and stir in alternately with apple and sugar mixture. Pour into greased and floured bundt pan. Bake at 350 degrees for 1 hour, covering with foil after 40 minutes. Let stand until cool.

HOT BUTTER SAUCE: Heat all together until dissolved. Serve hot over sliced cake.

I absolutely loved this cake. At first I was worried my batter was too thick but then I remembered the apples will release juice and cake the cake less dense. Which it did. This cake reminds me of a spice cake with apples in it. The cake is not too sweet nor too bland. It's divine. I made without the butter sauce and it still was great.
