FRESH APPLE CAKE 
1 c. sifted flour
1 tsp. baking soda
1/2 tsp. salt
3/4 tsp. cinnamon
1/4 c. shortening (butter is best)
1 c. sugar
1 egg, well beaten
2 c. chopped apple (2 or 3 med. red Jonathan or delicious)
1 c. chopped walnuts

Lightly grease 8 x 8 x 2 inch cake pan. Set aside. Sift together the first 4 ingredients and set aside. Put shortening into a bowl and add sugar gradually, beating until fluffy after each addition. Add egg, gradually beating well after each addition. Stir in the apples, beating only until blended after each addition and dry ingredients in thirds to the creamed mixture. Finally, beat only until smooth. Blend in nuts. Turn into pan. Bake at 350 degrees for 45 minutes. Top with whipped or ice cream.
