FRESH APPLE CAKE | |
1/2 c. butter 1 1/2 c. sugar 1 (8 oz.) carton low-fat plain yogurt 1 egg 2 tsp. vanilla 2 1/2 c. flour 2 tsp. baking soda 1 tsp. ground cinnamon 1/2 tsp. salt 1/4 tsp. ground nutmeg 3 c. (about 1 lb.) cored and chopped Golden Delicious apples 1 c. chopped nuts Cream butter; gradually add sugar. Add yogurt and egg; beat until fluffy. Combine flour, baking soda, spices, and salt; mix well. Stir dry ingredients into creamed mixture. Add apples and nuts; mix until blended. Pour into greased and floured 13 x 9 x 2 inch cake pan. Bake at 350 degrees for 50 to 60 minutes or until wooden pick inserted near center comes out clean. Makes 24 (about 2 1/4 x 2 inch) servings. |
