FRESH APPLE CAKE 
2 c. sugar
2 eggs
3 c. thin sliced fresh delicious apples
3 c. sifted flour
1/2 tsp. salt
1 c. chopped pecans
1 1/2 c. Crisco oil
1 tsp. vanilla
1/2 tsp. baking soda
1/2 tsp. cinnamon

Combine sugar, oil, eggs and vanilla and beat with mixer until light and fluffy. Add flour, soda, salt and cinnamon. Beat until smooth; add apples and nuts. Bake in bundt or tube pan at 350 degrees for 1 1/2 hours. This cake can be glazed, served plain or with sour cream topping. Bake cake the night before, cool and keep in airtight container or wrap in heavy foil. This cake stays moist and tasty for 4 or 5 days.
