APPLEY CHEESE SOUP 
1/2 c. pared chopped apples
1/4 c. chopped onion
1/2 c. finely chopped carrots and celery
1/2 c. butter
1/4 c. flour
2 c. apple juice
2 c. milk
1/2 lb. grated sharp Cheddar cheese
1 c. minced cooked ham

In large saucepan, over medium heat, saute onions, carrots, celery, apples and ham in butter until vegetables are cooked tender. Sprinkle in flour - stir until smooth. Add apple juice and milk. Continue cooking to a boil. Add cheese and stir over medium heat until cheese melts. Add salt and pepper to taste if desired.

Optional: Garnish with spoonful of sour cream and thin apple slice.
