COUNTRY SKILLET SUPPER 
1 1/2 lbs. Italian sausage, hot, sweet, or mixed
6 strips bacon, diced
1 1/2 lbs. potatoes, peeled, cooked, and drained
4 med. onions, chopped
2 lg. green peppers, seeded and cut into 1-inch pieces
4 c. water
Salt and pepper to taste

Heat water in a medium saucepan; add the sausages after pricking the casings so the fat will cook out. Cook for about 15 minutes. Drain. Set aside to cool. Meanwhile, peel potatoes. Cut into 1-inch cubes; set aside. In a large skillet cook bacon over medium-high heat 10 minutes or until browned. Remove bacon from skillet and drain on paper towels.

Add onions and green peppers to bacon dripping and saute 5 minutes. Add potatoes, salt, and pepper to taste, and saute until lightly browned. Cut the sausages into 1/2-inch slices. Add sausage to the skillet; lower heat and cook for 10 minutes longer. Sprinkle with bacon just before serving. Makes 4 to 6 servings.
