CAULIFLOWER AND CHEESE 
1 lg. head cauliflower
12 oz. cheddar cheese, grated
1 (8 oz.) can mushrooms, drained
1/4 c. green pepper
1/3 c. butter
1/2 tsp. salt
1 1/2 c. milk, added to 1/4 c. flour

Cut cauliflower into medium pieces. Wash and add to boiling salted water. Cook 10-15 minutes or until slightly tender. Drain well. While cooking cauliflower, saute mushrooms and green pepper in butter until tender. Add milk and flour to make gravy. Cook until thick, stirring constantly, add salt. Grate cheese. Lightly butter casserole, put 1/2 the cauliflower, 1/2 the sauce and 1/2 the cheese in layers; repeat. Bake uncovered 15-20 minutes at 350 degrees.
