CAULIFLOWER WITH CHEESE &
TOMATOES
 
1 lg. head cauliflower
4 firm, ripe tomatoes
1/2 c. melted butter
Salt & pepper
1/4 c. dry bread crumbs
1/2 c. grated Swiss cheese

Cut cauliflower into 1-2 inch pieces. Cook until firm. Drain and cool.

Mix melted butter, salt and pepper, bread crumbs and cheese. Place cauliflower in shallow casserole. Pour butter mixture over cauliflower and arrange sliced or wedges tomatoes over cauliflower. Bake at 350 degrees until heated through.
