CAULIFLOWER CHEESE PUFF 
1 lg. cauliflower
3/4 c. grated Cheddar cheese
1 tsp. sugar
1 1/2 c. med. white sauce
4 eggs, separated
Salt & pepper to taste

Trim cauliflower break into flowerettes. Cook in boiling salted water until barely tender. Put in buttered shallow baking dish. Make white sauce, add cheese. Beat egg yolks, sugar, salt and pepper and add white sauce. Beat egg whites until stiff and fold into sauce. Pour over cauliflower. Bake 350 degrees for 20 minutes or until firm. 4 to 6 servings.
