MINT PUFF COOKIES 
2 egg whites
1/2 tsp. cream of tartar
3/4 c. sugar
1/4 tsp. salt
1/2 tsp. peppermint flavoring
6 oz. chocolate chips
Food coloring, your choice of color, I use green

Preheat oven to 375 degrees for 15 minutes. Whip egg whites until they peak and are stiff. Mix in rest of ingredients. Put cookies by teaspoonful on foil on cookie sheet. Put in oven. Turn oven off. Let cookies bake in oven all night or 8 hours at least. Do not open oven door. Makes about 2 dozen teaspoon size cookies. I usually double the recipe.

These were fun, easy, and delicious!!! We used MINI semisweet choc chips and the cookies didn't crumble when we bit into them. We also made "one-bite" sized drops when plopping onto the baking sheets, and even our youngest children found them easier to enjoy! Merry Christmas!
