FRIED RICE 
4-5 c. cooked rice
4 eggs
3 tbsp. vegetable oil
2 tbsp. chopped scallions or onions
1 tsp. salt
1 tsp. sugar
2 tbsp. soy sauce
Dash pepper
1/4 c. chicken broth

Heat 1 tablespoon of oil in frying pan on high heat. Scramble eggs quickly and remove. Heat 2 tablespoons of oil in same pan; add cooked rice, salt, sugar, soy sauce and broth; add eggs. Stir fry over high heat 3 to 4 minutes.
