CHICKEN SUPREME | |
6 chicken breasts 2 beaten eggs 1 c. Italian bread crumbs 1 can (10 1/2 oz.) condensed chicken broth 1 tsp. flour 1/2 c. sliced mushrooms 1/2 c. cooking wine (white) 6 slices Mozzarella cheese 3 tbsp. oil 3 tbsp. butter Skin and bone breasts. Soak in beaten eggs for a while in refrigerator. Dip in bread crumbs. Fry in oil and butter. Place in baking pan. To fry pan drippings, add 1 cup chicken broth (don't dilute). Add 1/2 cup white wine and 1 tablespoon flour. Stir to blend and pour over chicken. Place mushrooms on top. Bake 30 minutes at 350 degrees. Place a slice of cheese on top of each breast. Bake 10 minutes longer. |
