SPINACH QUICHE 
CRUST:

1 c. flour
1/4 tsp. salt
6 tbsp. cold butter, in sm. pieces
1 egg yolk
2 tbsp. water

FILLING:

1 c. cooked chopped spinach
2 tbsp. minced onions, sauteed in 1 tbsp. butter
1/2 c. Swiss or Monterey Jack cheese, grated
1/2 tsp. salt
1/8 tsp. nutmeg
Pinch of cayenne pepper
5 eggs
1 egg white from crust
1 1/2 c. 2% milk
2 tsp. flour
Parmesan cheese

In food processor, put 1 cup flour, salt and butter, cut up. Mix until crumbs. Add 2 tablespoons water. Mix until forms dough ball. Pat out in quiche plate.

Cook and drain spinach. Saute onion. Beat eggs. Add milk and combine with 2 teaspoons flour, salt, nutmeg and pepper. Add spinach. Mix. Spread grated cheese and onions on quiche crust. Pour in egg and spinach mixture. Sprinkle with Parmesan cheese.
