CORN BREAD SALAD 
6 c. cornbread batter
1 small jar pimento (undrained)
1 small jar sweet relish (undrained)
1 medium onion, chopped
1/2 c. grated Cheddar cheese
2 hard-boiled eggs, chopped
1 bell pepper, chopped
3 ribs celery, chopped
1 1/2 c. mayonnaise
10 strips fried bacon, crumbled

Bake cornbread and cool. Crumble cornbread and blend with remaining ingredients. This keeps in refrigerator several days and is a nice alternative to potato or macaroni salad.
