CORN BREAD SALAD | |
1 box Jiffy mix 1 c. diced tomatoes 1 c. diced bell peppers 1 c. diced onion 1 jar Hormel bacon pieces 1 pkg. shredded Cheddar cheese 1 c. mayo 1/4 c. sweet pickle juice 2 tsp. sugar Cook Jiffy mix according to box directions. Let cool. Cut in half. Crumble 1/2 corn bread in dish, then 1/2 cup tomatoes, 1/2 cup bell peppers and 1/2 cup onion. Sprinkle 1/2 jar of bacon pieces. Mix together mayo, pickle juice and sugar. Drizzle 1/2 of this over corn bread layer. Make second layer the same and top with 1 cup cheese. This is better if it sets overnight. |
