SOUTH OF THE BORDER CASSEROLE 
1 (6 3/4 oz.) can chicken, drained and chopped
1 med. onion, chopped
1 (8 oz.) sour cream
1 can cream of chicken soup
1 can cream of mushroom soup
1 can Nacho cheese soup
1 (10 oz.) Ro-Tel tomatoes with green chilies
1/2 c. butter, melted
2 c. crushed tortilla chips

Spray a 9x11 inch glass dish with non-stick spray. Mix all ingredients thoroughly and add more if desired. Pour into dish and bake for 30 minutes at 350 degrees. Let set 5 minutes.

Note: You may also boil a whole chicken, debone and dice meat and add to this casserole instead of using canned chicken. It has a more chicken flavor when you do this.
