SOUTH OF THE BORDER EGGPLANT 
1 lb. ground beef
4 slices bacon, cut in half
1/2 c. chopped onion
1/2 c. chopped green pepper
1 c. shredded Mozzarella cheese
1 clove garlic, minced
1 med. eggplant, cut in 1/2 inch cubes
1 can (16 oz.) tomato sauce
1/4 tsp. pepper

Brown ground beef and drain. Fry bacon, onion and green peppers and garlic until bacon is crisp. Stir in ground beef, eggplant, tomato sauce, and pepper and brown. Simmer until eggplant is tender. Sprinkle with cheese, waiting for cheese to melt. 4 to 6 servings.
