SOUTH OF THE BORDER 
4 c. cooked rice
1 can Rotel
1 can corn
1 box Velveeta cheese, sliced
2 1/2 lbs. ground beef
2 c. Pace picante sauce (mild)
1 bag tortilla chips

Brown ground beef; drain. In a large pot add ground beef, Rotel, corn, cooked rice, picante sauce and sliced Velveeta. Cook on medium high heat until cheese is melted. Lower heat to medium, cook until desired consistency. Stir all the time.
