YELLOW SQUASH CASSEROLE | |
4-6 med. squash 2 tbsp. chopped onion 1/2 lb. Velveeta cheese 1 c. sour cream Salt & pepper to taste 1 tbsp. curry powder 1 c. crushed soda crackers 2 tsp. oil Cook sliced squash in small amount of water. Place squash into 9 x 13 inch baking dish. Saute onions in 2 teaspoons of oil. Do not brown. Add onions, sliced cheese, sour cream, pepper, salt and curry to squash. Top with crackers. Bake at 300-350 degrees until cheese melts and casserole begins to brown lightly on top. |
