YELLOW SQUASH CASSEROLE 
1 1/2-2 lb. yellow squash
1 sm. onion
1 sm. pkg. Stove Top stuffing
1 can cream of mushroom soup
1 c. sour cream
1 stick butter

Cook squash and onion together. Drain and mash together. Mix with remaining ingredients. Salt and pepper to taste. Grease baking dish. Bake at 350 degrees for 1 hour.

I followed this recipe and it was delicious. The whole family raved over it. I wasn't sure about how much squash so I used between 3 and 4 cups of squash.
