BAKED FISH FILLETS 
2 (1 lb.) fish fillets
Salt & white pepper
1/2 c. bread crumbs
1/4 c. grated Parmesan cheese
White wine, dry
1 tbsp. lemon juice
2-3 thinly sliced shallots or minced onion
Butter

Moisten fillets with lemon juice. Place them in a shallow buttered baking dish. Add salt and pepper and sliced shallots. Mix crumbs and cheese together and put on top of fillets. Dot with butter and pour in white wine to about 1/3 way up on fillets. Bake at 450 degrees for 25 minutes, uncovered.
