ITALIAN CREAM CAKE | |
2 c. sugar 1/2 c. Crisco 1 c. buttermilk 2 c. sifted flour 1 c. coconut 1 stick butter 5 egg yolks 5 egg whites 1 tsp. baking soda In a mixing bowl cream well together sugar, butter and Crisco. Add (one at a time) 5 egg yolks. Sift the flour with the baking soda and add this to the mixing bowl. Stir in the milk and coconut. In a small mixing bowl, mix the egg whites until stiff. Fold them into the batter. Grease and flour 3 (9") cake pans. Pour the mixture into the three pans and bake at 350 degrees for 25 minutes. FROSTING: 8 oz. cream cheese 1 stick butter 1/2 c. chopped nuts (opt.) 1 lb. powdered sugar 1 tsp. vanilla Mix all ingredients into a bowl until creamy. Spread evenly over the cake when cool. |
