CHEESY SQUASH 
6-8 yellow squash
1 sm. onion, diced
Salt
1/4 stick butter
5-6 cooked crisp bacon
Velveeta or Cheddar cheese

Slice squash and cook with diced onion in boiling salt water until tender. Drain well. Add squash to casserole dish. Dot with a little butter. Top with Velveeta or grated Cheddar cheese. Sprinkle crumbled bacon on top. Bake at 350 degrees for about 20 minutes. Serves 4-6.
