FILLED COOKIES 
1/2 c. shortening
1 c. sugar
1 egg, beaten
1 tsp. vanilla
1/2 c. sweet milk
3 1/2 c. cake flour
3 tsp. baking powder
1/2 tsp. salt
Your favorite jam or jelly

Cream shortening and sugar well. Add vanilla and beaten egg. Sift dry ingredients. Add alternating dry ingredients with milk to shortening and sugar mixture. Beating well until blended. Chill 15 minutes before rolling out so dough will be easier to handle. Roll 1/8 inch thick on a floured board. Cut dough with 2 1/2 inch round cookie cutter. Cut out center from 1/2 of the cookies. Place 1 teaspoon jelly on bottom cookie. Top with cookie with center out. Press together. Bake at 375 degrees for 10 to 15 minutes or until light brown.
