SPINACH TOFU - PIM'S 
2 tbsp. oil
1 chopped onion
1/4 c. chopped parsley
2 tsp. dill seed
1 c. fresh or 1 pkg. frozen spinach
Thyme
Salt and pepper
1/2 lb. tofu, drained
1 tbsp. bacon bits
1 egg
1 tbsp. soy sauce

CRUST:

1 c. whole wheat flour
2/3 c. oatmeal
Pinch of salt
1/2 c. butter
3 tbsp. water

Saute onions, add parsley, dill, spinach, cover and steam until spinach wilts. Crumble tofu add egg and little water. Pour in pie shell and cover with crust. Bake at 375 degrees for 30 to 40 minutes.

Crust: Knead lightly until smooth. Roll out and line 8 inch pie dish. Chill 15 minutes.
