CHICKEN & DUMPLINGS 
Hen

Celery (opt.)

DUMPLINGS:

2 c. flour
2 tsp. salt
1 tsp. baking powder
2 tbsp. shortening
3/4 c. water

Boil hen until tender. Remove and debone. Reserve at least 5 cups chicken broth. You may add onion and celery to the broth and let cook until soft before adding the dumplings. Work flour, salt, baking powder and shortening together, add water. Roll out on floured board until thin. Cut in squares and drop into the hot broth. Add chicken. Cook 15 minutes. Cover and let set for about 30 minutes before serving.
