BAKED PORK TENDERLOIN 
6 pork tenderloin steaks, 1 inch thick
1/2 c. flour
1/2 tsp. salt
1/2 tsp. pepper
2 tbsp. butter/oil
1 c. chopped onion
1 clove minced garlic
1 tsp. ground ginger
1 (1 lb.) jar applesauce
1/2 c. sauterne wine
1/2 c. soy sauce (low salt works well)

Flatten tenderloins slightly with cleaver; rub both sides with flour seasoned with salt and pepper. Brown in butter/oil; transfer to oven serving dish. Pour off all but 2 tablespoons fat. Brown onion and garlic. Stir in ginger.

Mix together applesauce, wine, soy sauce. Stir into onion mixture. Simmer 1 minute, pour over pork. Bake 1 hour, 350 oven. Serves 6.
