MEXICAN CAKE 
2 eggs, beaten
2 c. sugar, add
1 can (20 oz.) crushed pineapple with juice, add
2 c. flour
1 tsp. baking soda, add
1 c. broken pecans

ICING:

8 oz. cream cheese
1 stick butter
2 c. XXXX sugar
1 tsp. vanilla

For cake, combine all ingredients and bake at 350 degrees. Use two 9 inch pans or one 13 x 9 inch pan.

For icing, beat all ingredients until smooth and spread on cooled cake.
