KATIE'S PUMPKIN PROTEIN COOKIES | |
This recipe is super healthy -- full of protein and healthy fats. Whenever I have a sweet craving, I whip this up as a snack! 1/3 cup regular oats (not quick-cooking) 1 scoop vanilla protein powder 2 tbsp. flax seeds 2 tbsp. wheat germ 1 egg (or egg substitute equivalent of 1 egg) 1 tbsp. canned pumpkin 1 tbsp. Equal (or equivalent) 1 tbsp. smart balance omega oil (or some kind of canola or veg oil) Preheat oven to 350°F. Mix all ingredients together. Coat a cookie sheet with non-stick cooking spray (Pam). Spoon tablespoons of cookie mixture onto cookie sheet. Bake at 350°F for 8 to 10 minutes. Mixture makes 5 cookies. Submitted by: Katie K. |
