RHUBARB BREAD 
2 c. fresh rhubarb, chopped
2 c. sugar
3 c. flour
1 tsp. salt
3 tsp. baking powder
1 tsp. cinnamon
1 c. milk
2 eggs
3 tbsp. oil
3/4 c. chopped nuts

Mix rhubarb and 1 cup sugar together. Let stand 1/2 hour. Sift together flour, salt, baking powder, cinnamon and remaining sugar. Add milk, eggs and oil. Then fold into rhubarb mixture. Add nuts. Bake 1 hour at 375 degrees.
