COLD GARDEN SOUP 
5 c. white chicken stock (homemade if possible)
2 c. chopped green beans, raw
2 c. chopped Romaine, raw
2 c. chopped zucchini, raw
2 c. raw peas or 1 box frozen (unthawed)
1 c. chopped celery
1/2 c. chopped scallions
1/4 c. chopped parsley
Salt
Pepper
Chopped parsley

In saucepan, combine all ingredients except salt and pepper. Simmer the vegetables, partially covered for 15-20 minutes or until tender. Put through the blender about 1 cup at a time until all is smooth. Season with salt and pepper. Chill thoroughly and garnish each serving with chopped parsley. Serves 6-8.
