NEOPOLITAN COOKIES 
1 c. butter, softened
1 1/2 c. sugar
1 egg
1 tsp. vanilla
2 1/2 c. flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. almond extract
4 to 5 drops red food coloring
1/2 c. chopped walnuts
1 (1 oz.) sq. unsweetened chocolate (melted)

Line bottom of 5 x 9 x 3 inch loaf pan with waxed paper.

Cream butter in large mixing bowl. Slowly add sugar, beating until light and fluffy, add egg and beat well. Add vanilla. Combine flour, baking powder and salt in medium bowl. Add to creamed mixture, beat until well blended.

Divide dough into thirds. Add almond extract and food coloring to one portion. Spread into pan. Add nuts to second mixture and spread into pan over first layer. Add melted chocolate to remaining mixture and spread evenly over second layer.

Cover and refrigerate overnight. Turn dough out, remove wax paper, cut in 1/2 lengthwise and then crosswise into 1/2 inch pieces, place on ungreased cookie sheet. Bake at 350 degrees for 10 minutes. Store in airtight container.
