NEOPOLITAN CREAM FOR CASSATA
CAKE
 
8 tbsp. sugar
6 egg yolks
6 tbsp. flour
1 qt. milk
Peel of 1 orange

Beat sugar and egg yolks until creamy. Blend in flour. pour into double boiler; add orange peel and milk. Stir well with wooden spoon until thick. Remove peel. Whip with egg beater until glossy. Remove from heat and allow to cool.

Separate Sponge Cake into four layers. Spread cream on each layer. Repeat layering and finish with cream on top.
