1/2 lb. ground beef suet 2 lbs. diced beef 1 garlic clove, sliced 1 1/2 tbsp.. paprika 3 diced chili pepper pods or 3 tbsp. chili powder 1 tbsp. cumin seed 1 tbsp. salt 1 tsp. white pepper 1/2 tsp. oregano 1 1/2 diced sweet pepper pods 3 c. water Pinto beans to taste (canned pintos in tomato sauce are okay) Fry out suet in heavy kettle, then add meat, garlic, and all other ingredients. Simmer, covered, on very low heat for 3 hours, stirring occasionally. If canned beans are used, add them just before serving. Do not use ground beef otherwise you will have a very rice, spicy beef soup, good, but not chili. |
